Did you put the Ricotta.Cream Cheese filling AND jam in those? Cause I never thought to do that!
Also, if the holes are "closing up" on you in that last bake, one thing I do is I don't make the hole with my fingers - I actually use measuring cups to make the hole as wide as possible.

@dolari Yes, I put cheese in all of them, then added the different jams to some.
And I did use the measuring cup trick to make the indent. Bonus, you don't have to pick the dough ball up and handle it, so it doesn't deflate as much on the edges. (They only look closed up because of the angle, they came out perfect!)
