Milk, eggs, butter, flour, yeast, sugar, and salt getting thoroughly kneaded. It's time for kolaches! Trying out tbe recipe @dolari shared.

And done! Kolaches! 4 with cheese blend only, 4 with cheese and a strawberry-rhubarb jam, and 8 with lemon curd.

@dolari they turned out great! I may have slightly overbaked them, but I had to rotate the trays to let the ones that had been on bottom get some top rack time. I'll adjust on the next batch.

@TonyaMarie @dolari in Texas we make kolaches with meat, a result of Czech immigrants moving there in the 1800s. I made some for the first time this week. It's like a meat pastry, I just have a hot dog and cheese and some jalapeño slices in there.

They're actually "Koblanisky" but in Texas they've inherited the name Kolache since they're often sold together.

That said...I WOULD LOVE YOUR RECIPE. This is the third of the Texas Baking Trifecta I need to master.

1) Kolache: Almsot Mastered
2) Koblanisky: Never tried. Planning to make them soon using the kolache dough for the bread, like Weikels' does, but don't have a good recipe for the construction of the roll.
2) Cinnamon Rolls: MASTERED, OMG MASTERED FIRST TIME.

@dolari @TonyaMarie ah so, this is my first attempt, so it's a bit "in dev" at the moment while I try to capture the magic of my favorite places in Houston. I stuck pretty exactly to the below recipe here, except I subbed in bread flour for AP.

I used some hot dogs pan fried in butter, sharp cheddar cheese, and jalapeños for the filling. Got good reviews from other TX natives, but they can def be better.

@secant2 @dolari Excellent point! I have the same problem, my wife has a rather lower spice preference than I do.

OTOH, my brother leaves me at the starting gate in the spice race. I can't eat some of the stuff he makes. My eyes water being in the same room with his hot wings!

@dolari @secant2 I have a dear friend back in Texas who uses weapons grade sauces, the stuff that you use a couple of drops for an entire pot of chili and it's still too hot for me. 🌶️ 🌶️ 🌶️ 🌶️ 🌶️

@dolari @TonyaMarie I was really worried about the dough texture so I made a bunch of white bread loaves until I got one that I liked. Luckily seems like that helped transfer to the outcome of this recipe. I want to try incorporating a bit of king's hawai'ian roll copycat recipes to make the bread sweeter, then I had a left field idea of using longanisa sausages for the filling, but I'll have to make my own to get the right form factor :/

@secant2 @dolari If you have a good recipe for a Hawaiian roll , I'd love to try it. I use them for sliders, but actual King's rolls are a bit thicker than I like for that purpose. If I could make my own with a thinner form, that would be perfect.
