And done! Kolaches! 4 with cheese blend only, 4 with cheese and a strawberry-rhubarb jam, and 8 with lemon curd.
@dolari they turned out great! I may have slightly overbaked them, but I had to rotate the trays to let the ones that had been on bottom get some top rack time. I'll adjust on the next batch.
Baking day!
@TonyaMarie @dolari ah yes the other kind of kolache, looks amazing.
Baking day!
@secant2 @TonyaMarie - Ah, the "pigs in a blanket" version.
They're actually "Koblanisky" but in Texas they've inherited the name Kolache since they're often sold together.
That said...I WOULD LOVE YOUR RECIPE. This is the third of the Texas Baking Trifecta I need to master.
Baking day!
1) Kolache: Almsot Mastered
2) Koblanisky: Never tried. Planning to make them soon using the kolache dough for the bread, like Weikels' does, but don't have a good recipe for the construction of the roll.
2) Cinnamon Rolls: MASTERED, OMG MASTERED FIRST TIME.

@dolari @TonyaMarie ah so, this is my first attempt, so it's a bit "in dev" at the moment while I try to capture the magic of my favorite places in Houston. I stuck pretty exactly to the below recipe here, except I subbed in bread flour for AP.
I used some hot dogs pan fried in butter, sharp cheddar cheese, and jalapeños for the filling. Got good reviews from other TX natives, but they can def be better.
Baking day!
@dolari @TonyaMarie also a good way to denote which ones have jalapeños in them for the non spicy people in your life, like the person I'm married to lol
Baking day!
@TonyaMarie @secant2 - One of my former roomies made good spicy food, but we'd joke that she was weaponizing her meals while cooking. :)
Baking day!
@dolari @TonyaMarie I was really worried about the dough texture so I made a bunch of white bread loaves until I got one that I liked. Luckily seems like that helped transfer to the outcome of this recipe. I want to try incorporating a bit of king's hawai'ian roll copycat recipes to make the bread sweeter, then I had a left field idea of using longanisa sausages for the filling, but I'll have to make my own to get the right form factor :/
Baking day!
@TonyaMarie @dolari I guess I need to start posting the cooking stuff to both my accounts lol
I've found some copycat recipes online but haven't tried any of them yet. I'll try to remember to post a link (or my own I guess) if I figure it out. Badger me if I don't.
Baking day!
@TonyaMarie @dolari oh yeah, \@mpuckett259\@hachyderm.io that's my more "professional" account haha
Baking day!
@secant2 @TonyaMarie - The only copycat I ever did was a Whataburger, which came REAL close (I just can't find "wide" buns like Whataburger uses!).
Baking day!
@TonyaMarie @dolari oh no please don't remind me that whataburger exists and I can't go there anymore 😭😭😭
Baking day!
@secant2 @TonyaMarie - I'm an Austinite exiled to Seattle, I feel your pain. ❤️
Baking day!
@dolari @TonyaMarie oh yeah I'm a Houstonian exiled to Seattle how about that lol
Baking day!
@TonyaMarie @secant2 - Officiall I'm a San Antonian. I got to Austin as quick as I could. :D
Baking day!
@TonyaMarie @dolari there's a strangely large amount of us up here.
Baking day!
@TonyaMarie @dolari yeah it's one of those weird things
Baking day!
@secant2 @TonyaMarie - ::SAVED::
Seeing as I was just laid off from my job, I have the time to make these. :)
Baking day!
@dolari @TonyaMarie oh yeah I forgot, I also have a copy of an Eyes of Texas recipe book with a recipe in it, but I haven't tried it yet. As you can see it's rather different than the blog.
Baking day!
@TonyaMarie @dolari yeah like the bread makes the kolache but you really need something to be inside it lol
Baking day!
@dolari @secant2 That's the word! I couldn't remember it!
And what is the other corner of the Texas Baking Trifecta?
