And done! Kolaches! 4 with cheese blend only, 4 with cheese and a strawberry-rhubarb jam, and 8 with lemon curd.
@dolari they turned out great! I may have slightly overbaked them, but I had to rotate the trays to let the ones that had been on bottom get some top rack time. I'll adjust on the next batch.

@TonyaMarie @dolari in Texas we make kolaches with meat, a result of Czech immigrants moving there in the 1800s. I made some for the first time this week. It's like a meat pastry, I just have a hot dog and cheese and some jalapeño slices in there.

They're actually "Koblanisky" but in Texas they've inherited the name Kolache since they're often sold together.
That said...I WOULD LOVE YOUR RECIPE. This is the third of the Texas Baking Trifecta I need to master.

@dolari @TonyaMarie ah so, this is my first attempt, so it's a bit "in dev" at the moment while I try to capture the magic of my favorite places in Houston. I stuck pretty exactly to the below recipe here, except I subbed in bread flour for AP.
I used some hot dogs pan fried in butter, sharp cheddar cheese, and jalapeños for the filling. Got good reviews from other TX natives, but they can def be better.

@dolari @secant2 I have a dear friend back in Texas who uses weapons grade sauces, the stuff that you use a couple of drops for an entire pot of chili and it's still too hot for me. 🌶️ 🌶️ 🌶️ 🌶️ 🌶️
