Just saw another video that used Ricotta cheese for an ancient Roman recipe, and frankly, I'm retiring my first book on Roman cooking that said "use cheddar" for any cheese dish and everything tasted BAD.

@dolari cheddar wasnt even invented until 1350 or so... It would mostly be cheeses like ricotta and parmesan

@Mondobizarrro - Yeah. When I first got the book in the late 90s, I didn't have any reference other than that book. It said you could make your own cheese, or just use cheddar as it was a close analogue.

It is absolutely not.

I never realized that Roman cheese would be more like farmers cheese or ricotta until recently when I saw Sohla use it for one of her ancient history recipes.

@dolari cheddar? And to think I no longer cook with it. Meanwhile Asiago Parm & Romano are the cheeses of choice.
