I just happened to have everything I needed for these and decided to bless my tortillas with Austiny goodness.

@andyy - I usually make them in the following types:
Bacon, Egg and Cheese
Sausage, Egg and Cheese
Fried Cubed Potato, Egg and Cheese
But any combo of those works!
@dolari oh they're pretty easy. It's just the whole Austin vibe of breakfast tacos that I kinda miss. I'm going to make some tomorrow for sure!
