Well. That's a question I didn't expect on a job application I'm otherwise qualified for:

Day Two of Business in Real Life, so completions were a little light today....

This Week's Fancy Pants Meal: Taiwanese Pork Rice Bowl (卤肉饭)

(minus the rice cause, you know, diabetic)

I've decided that three plain meals a week to save money isn't gonna do it anymore, so moving forward I'm making two plain meals, and one fancy meal. And this one is Lu Rou Fan minus rice. My house smells like an Asian grocery right now.

# Lu Rou Fan (Taiwanese Braised Pork)

Universal Yums

3.0 whole star anise
1.0 whole cinnamon stick
6.0 whole cloves
3.0 whole bay leaves
2.0 tsp Sichuan peppercorns
0.5 whole orange peel
2.0 slices ginger (sliced thinly)
1.0 pound pork-belly (skin on) (cut into 1/4 inch sized pieces)
2.0 tsp vegetable oil
1.5 tbsp sugar
1.0 whole onion (diced)
8.0 whole shiitake mushrooms (diced)
0.25 cup sherry
5.0 tbsp soy sauce
2.0 cups water
4.0 whole hard boiled eggs

1 - Bundle together the star anise, cinnamon stick, cloves, bay leaves, peppercorns, orange peel and ginger in a cheese cloth or tea infuser.
2 - Bring a medium pot of water to a boil.
3 - Add the pork belly and blanch for 1 minute.
4 - Strain the meat and set aside.
5 - Heat the oil in a wok or large pan over low heat, then add the sugar. Heat the sugar until it starts to melt.
6 - Add the onion. Raise heat to medium-high and stir-fry for a minute.
7 - Add the mushrooms, stir-frying for another two minutes.
8 - Add the blanched pork, sherry, soy sauce and water. Stir while bringing the mixture to a boil.
9 - Once boiling, add the spice bundle and hard boiled eggs.
10 - Turn the heat to low and simmer for 1 1/2 hours, stirring occasionally to prevent sticking.
11 - When the meat is fall-apart tender, remove the spice bundle.
12 - Raise the heat to medium high, stirring occasionally for 5 minutes to thicken the sauce
13 - Serve over white rice and enjoy.

So I think the struan bread is as good as it's gonna get, and that's fine by me. I think next week will be sweet corn bread. :)

# Struan Bread

2.0 loaves

5.0 cups unbleached bread flour
0.25 cup coarse cornmeal
0.25 cup rolled oats
3.0 tbsp oat bran
0.25 cup water (rice)
0.25 cup brown rice
0.25 cup brown sugar
2.5 tsp salt
2.0 tbsp instant yeast
1.5 tbsp honey
1.5 cups water (dough)
0.5 cup buttermilk
sesame seeds
1.0 whole egg

1 - Boil the brown rice in water until fully cooked.
2 - Combine all of the ingredients (except the egg and the sesame seeds) in a large mixing bowl.
3 - If using a mixer, use the dough hook attachment and mix on the lowest speed for 2 minutes.
4 - Let the dough rest for 5 minutes to fully hydrate the flour.
5 - Once again, mix on the slowest speed with the paddle attachment for 2 minutes more. The dough should be very tacky or slightly sticky.
6 - Transfer the dough to a lightly floured work surface, then dust the top fo the dough with flour. Lightly knead the dough for 2-3 minutes, adding more flour as needed to prevent sticking. The dough will still be soft and sticky but should hold together to for a soft, supple ball.
7 - With oiled hands, reach under on end of the dough, stretch it out, then fold it back onto itself. Do this from the back-end and then from each side. Flip the dough over and tuck it into a ball.
8 - Place the dough in a clean, lightly oiled bowl, cover and let sit at room temperature for 10 minutes. Repeat this entire process two more times, completing all repetitions within 30 minutes.
9 - Place the dough into a greased loaf pans.
10 - Let the dough rise until increased to about 1 1/2 times its original size.
11 - Preheat the oven to 350° F (177°C).
12 - Crack an egg into a bowl and beat.
13 - Brush the top of the dough with egg and sprinkle with sesame seeds
14 - Bake the loaves for 20 minutes, then rotate the pan. The bread is done when it has a rich golden color, the loaf sounds hollow when thumped on the bottom, and the internal temperature is about 185°F (85°C)
15 - Cool bread to room temperature before cutting into it.

Again, didn't play a lot today while I did other things, so only two competitions, and really they're the same quest....

Got my first full outfit! The Twilight Princess outfit. Sadly, I don't think the Gerudo outfit is going to be available, so as soon as I get a chance to dye it, it's going Four Swords Adventures Purple. :)
